this would be the one!



So, before I show you the Healthy Soup Recipe, I’d like to share a few reasons why this soup is so good for you.


Pretty much all of the ingredients are high on the Nutritional Index.

I’ve chosen the ones I feel have the most exceptional health benefits to talk about.


BONE BROTH:

Bone Broth is a highly nutritious liquid with compounds such as collagen, proline, glycine and glutamine, essential for protein synthesis, nutrient absorption, building and repairing muscles and supporting bone mineral density. In fact, glycine may have anti-inflammatory and antioxidant effects as well. Also essential for joint health is the glucosamine and chondroitin, which comes from the connective tissue surrounding the bones. Additionally, bone broth has many vitamins such as vitamin A, k2 omega 3s and 6s and several minerals and has been known to support immune and brain function. And finally - it’s good for your Gut!!! If you’re having gut issues, having bone broth daily can certainly help. Lots of Goooooood Stuff!!!!!


*For this recipe you can make your own bone broth before making the chunky soup or you can buy pre-made bone broth.


GINGER:

Ginger contains gingerol, which has many medicinal properties. Just to name a few, It is used for digestion, to reduce nausea and help fight the flu and common cold symptoms. Ginger also has anti-inflammatory and antioxidant properties and some believe it helps to reduce heart disease risk factors.


MUSHROOMS:

Mushrooms are quite nutritious and delicious. The can decrease the risk of cancer, help lower cholesterol, stimulate a healthier gut, support a healthy immune system and even help to protect brain health.


SCALLIONS and ONIONS:

Onions help in keeping the heart healthy, lower risk of diabetes, reduce inflammation and bad cholesterol and help in preventing cancer. They also contain quercetin, an anti-inflammatory antioxidant that limits the effects of inflammatory chemicals within the body.


OLIVE OIL:

Olive Oil is great for many things. It’s packed with polyphenols, which have antioxidant, anti-inflammatory, cancer- fighting, neuro-protective and antimicrobial properties.

It’s also very good for cardiovascular health and supports healthy memory and brain function.


KALE:

Kale is a nutritional superstar due to the high amounts of vitamins A, K, B6 and C, calcium, potassium, copper and manganese it contains. It is also considered a cruciferous vegetable, which all have a variety of health benefits including helping to manage blood pressure, boosting digestive health and protecting against cancer and diabetes.


Of course, all of the ingredients combine together with the love you pour into making the soup,

to create an extremely healing and delicious eating experience.

Here are the ingredients in the order that you cook them.


The Base:

Bone Broth

Water

Better than Bouillon (This has the best flavor, but if you can’t find this, use regular bouillon)


The Veggies:

Ginger

Carrots

Celery

Scallions (or Onions)

Mushrooms

Cilantro

Kale

Rice - make separately


Dress with:

Avocado

Olive Oil

Lemon

Sea Salt


Directions:

  1. Thinly chop all veggies, except Kale

  2. Cook Ginger, Carrots, Celery in bone broth water and bouillon for 10 min on medium low … covered.

  3. Add Scallions (or Onions) and Mushrooms and continue cooking 10 min … covered

  4. SImmer (lowest heat) for another 45 min - hour … covered.

  5. Turn off Heat … add Kale … cover and let sit another 5 min or so


Serve:

  1. Scoop a bed of rice in bowl or cup

  2. Add a hard boiled egg (optional)

  3. Add Soup

  4. Dress with Avocado, Olive Oil, Lemon and Sea Salt
